Thai Green Coconut Noodle Bowl

I hope you are opening this recipe with a grumbling tummy that is READY for some deliciousness.

OKAY. So, this recipe is fast becoming one of my mid-week staple dishes. I got into the kitchen a few days ago and was just like: I NEED TO BE TRANSPORTED BACK TO ASIA, EVEN IF JUST THROUGH FOOD. I was supposed to be on a plane going over to Bali, Indonesia RIGHT NOW. I had a friend’s wedding to go to and I had some jobs lined up working in retreat spaces & giving talks. But, COVID-19 had other ideas and put quick pay to that (as it has with every other persons’ plans & life). So, in lieu of sitting down in the jungle in Indo to a bowl of noodles, I brought Indo home to my belly with this delicious curried coconut noodle bowl.

One of my favorite parts about this recipe is just how adaptable & FAST it is. If you have a 1) dinner date 2) a friend coming over for a last minute lunch/dinner 3) or a quick family meal that you need to russel together (but that still looks LEGIT, as if it had been carefully & lovingly made & prepared long in advance and with much forethought this is FOR YOU).

It’s exactly these factors that also make it an AMAZING meal to have mid-week when life is busy, you’ve been rushing around & all you want is something warming, delicious & hearty but still super nutritious and DELICIOUS.

The ginger & other spices used in this recipes also make it a great meal if you feel a cold coming along OR if you would like something that is relatively easy on digestion. The ginger really helps with stoking the digestive fire & the cumin is one of the most powerful spices to aid in digestibility. AND then, the coconut milk is also very, very helpful in calming down any excess PITTA (fire) energy because coconut is innately cooling & soothing. So, the combo leaves the belly feeling smooth & the body & mind nourished. In fact, the first night I made this, I had a bad tummy day due to some stressful experiences in the days previous to that. However, after having this meal, my digestive system immediately felt supported. It felt like this meal really gave my tummy a helping hand UP to health again.

So, if you, like me, had a busy day running around (which would imbalance Vata dosha if not managed correctly through regular snacking, resting & grounding) and are feeling super heated & charged (Pitta) this is a great meal because the cooling and warming energetic qualities of this meal are perfectly balanced in order to restore balance to both Vata & Pitta to dosha.

ANYWAY, without further a due … HEREWITH THE DELICIOUS COCONUT NOODLE BOWL. I hope it brings you, your belly & your loved ones as much joy & healing as it did me.

Ingredients:

  • 1 teaspoon of coconut oil 

  • 1/2 tablespoon of freshly grated ginger

  • 2 tablespoons of Thai green curry paste

  • 1 cup water

  • 1 small tin (165ml) of full-fat coconut milk 

  • 1 cup green beans, chopped in half 

  • 1/4 cup green peas 

  • 1 big portobello mushroom, sliced finely 

  • 1 big broccoli floret 

  • 2 cauliflower florets

  • 1 tablespoon of soy sauce

  • 1 tablespoon of raw honey 

  • 1/2 - 1 teaspoon ground cumin 

  • 1/2 lime, juiced 

  • Black pepper 

  • 1 packet of Woolworths Pad Thai noodles 

  • To serve: top with fresh basil & spring onion & if you would like to add crispy tofu squares those are delicious on top, too! 

Method:

  1. In a pot, place your 1 tsp coconut oil. Add in the ginger & green curry paste. Stir and cook in oil for a few seconds until fragrant. Then add in the water & coconut milk. Bring to heat. Add in the soy sauce, lime juice & honey. 

  2. Add in sliced & chopped vegetables, while they cook let the noodles soak in hot water (or cook according to your packets instructions). Turn off heat so that the vegetables don’t overcook. Add in the noodles. Taste & adjust seasoning if necessary according to your palette. 

  3. Serve in bowls & top with chopped basil, spring onion & the optional tofu add-in.
