Coconut, Banana Cookies with Walnut & Dark Chocolate

Hi beautiful humans. I hope you are all having a splendiferous Friday so far & getting geared up for another wild weekend locking down. In fact, I am gearing up for a wild virtual party on Saturday - a global, virtual Secret Sunrise where London will be celebrating their second year of Secret Sunrising! We will be jiving & dancing in the comfort & leisure of our own living rooms with live virtual DJ’s and a MASSIVE collective dance scene happening all around the world! I must say, after being predominantly in doors for way too long & without my usual go-out-and-dance-to-feel-alive-young-and-joyful scenes with friends, this promises to be a splendid alternative. Time to get funky in the lounge!

However, in lieu of joining me for this party as tickets are sold out (but don’t worry there are more virtual dance parties to come!), here is the long-awaited quick-to-whip-together breakfast cookies! (Or anytime cookies, really). I LOVE THESE SO MUCH. They are truly, AMAZING. One thing though, they are a small-batch cookies (making around 6-7 cookies) and they don’t last very long in terms of retaining their WOW-YUM factor. In other words, they are best eaten on the day they are made or the day after but that’s why it is great that they are small batch. So, if you are gonna make them, eat them within two days OR you can keep them longer but just make sure that when you eat them you heat them up in the oven again to get that “freshly baked” feel you know?

These really amazed me at how simple, wholesome yet SUPER delicious they are.

Now, without further a due. Let us get straight into the recipe! 

This recipe made me feel happy. It’s just a beautiful example of how you can really create magical dishes and treats with 1. minimal ingredients and 2. using just whole food ingredients so that you can satisfy the desire for that sweet & delicious somethin’ without compromising your health.

Ingredients:

  • 2 small bananas or 1 large banana (ripe & spotty so that they are sweeter!)

  • 3/4 cup of desiccated coconut, unsweetened

  • 1/4 cup of rolled oats

  • 2 tablespoons of raw sugar or coconut sugar 

  • 2 teaspoons of chia seeds

  • 1 teaspoon of ground clove

  • 1 teaspoon of ground cinnamon 

  • 4 walnut halves, chopped

  • 1/2 a bar of 70% Dark Lindt chocolate or chocolate of choice

  • Big pinch Himalayan salt

Method:

  1. Preheat your oven to 180 degrees celsius or 375 degrees fahrenheit. Line a baking tray with parchment paper. Set aside. 

  2. In a mixing bowl mash the banana well. Add in the chia seeds, the spices, the salt, the sugar & the walnuts. 

  3. Now add in the coconut & rolled oats and mix well. 

  4. Roll into 7 balls & place on the baking tray. Now flatten each ball down into an evenly flat cookie & place into the oven for 22 minutes, or until perfectly golden around the edges & underneath each cookie. 

  5. While the cookies are baking and the kitchen is slowly filling with the cosy scent of homemade cookies, prepare your chocolate drizzle. Make a bain-marie by bringing a small pot of water to the boil. Place a small glass or metal bowl over that (the bowl shouldn’t be touching the water) and then place the chocolate into the bowl & stir consistently so that the chocolate begins to melt from the heat of the water steaming up from underneath. 

  6. Once the cookies are done, take them out of the oven & let them cool a bit. Now drizzle the chocolate over the cookies and place them on a plate to enjoy with some cold almond milk! 

  7. To store, keep them in an airtight container. ENJOY!!!
